Pecan Torte

20 Ritz crackers rolled fine
1 cup of sugar divided
1 cup of pecans chopped
3 egg whites
1 teaspoon vanilla
1 small carton whipping cream, whipped (Cool Whip works but real whipping cream works best.)
Prepare the dry ingredients in a bowl by mixing together: the 20 Ritz crackers, ½ cup of sugar and 1 cup of chopped pecans.
In another bowl, beat 3 egg whites, adding ½ cup of sugar (this is the second ½ cup) and 1 teaspoon of vanilla. Beat this mixture until stiff. Fold in the dry ingredients to the egg white mixture, mixing well. Pat the mixture into a buttered pie plate.
Bake at 350 for 30 minutes. After the torte has cooled, top with real whipping cream. (Beat the whipping cream until stiff. I add a small amount of sugar to my whipping cream.) Refrigerate.
